Hong Kong Noodle Salad

- 1 bag of Soba Noodles
- ½ cucumber, seeded and julienned
- 1 carrot, julienned
- 2 green onions
- ¼ cup toasted almonds
- 3 tbsp. toasted sesame seeds
- salt & pepper to taste
- Sauce
- 1 cup peanut butter
- ¼ cup rice wine vinegar
- 3 tbsp honey ginger balsamic vinegar
- ⅛ cup honey
- 2 tbsp sesame oil
- 1 green onion
- 1 tbsp grated fresh ginger
- 1 tbsp fresh garlic, minced
- Cook soba noodles according to package instructions. Cool with cold water and drain until dry. Toss with sauce and vegetables.
