June Get Out of Your Box Challenge & Summer Cocktails

June 2, 2016 by Dawn Pasco

Grapefruit Shandy

It’s unofficially the start of summer. The kids are out of school, the pool is open and it’s time to think about summer cocktails. My challenge for you this month is to come up with a signature cocktail you can serve guests at a moments notice.  If you enjoy being a mixologist have some fun and create your own or you can try a few of these delicious cocktails.  The recipe for this easy grapefruit shandy is at the bottom of my post.

Cake By The Ocean Cocktail

This Cake by the Ocean Cocktail created by Crazy For Crust looks delicious. I love the combination of tropical flavors and what’s not to love about sprinkles!

Watermelon Moscow mule

Those who know me well know I love a Moscow Mule. This Watermelon Moscow Mule from I’m Bored, Let’s Go looks like a fun summer option to try. I would have to use my copper mugs though.  A Moscow Mule just isn’t the same to me without the mug.

Paloma Cocktail

Paloma’s seem to be a popular cocktail right now. This Paloma from Lemon Tree Dwelling looks very refreshing.

Limoncello Sangria

I’m taking a class on Limoncello with local Chef Jasper Mirabile, Jr. at Olive Tree this summer. This Limoncello Sangria from A Night Owl Blog looks like something I may need to make before class starts.

Cucumber Lime Margaritas

I love the refreshing taste of cucumber and will often order cocktails that have cucumber in them when dining out.  This Cucumber Lime Margarita looks refreshing and you get a serving of vegetables.

strawberry basil infused vodka

I’ve always wanted to try making a fruit infused vodka.  Inspired by Charm shares this strawberry basil infused vodka as well as a pineapple infused rum.  The possibilities are endless in terms of what you could create with these.

mint julep recipe

I shared this mint julep recipe in a past post. It’s my friend Anne’s family recipe.  This mint julep is great for a party and lots of fun to mix up.

Grapefruit Shandy

If you don’t drink you can still make many of these cocktails for a fun summer beverage, just omit the alcohol.  Lately anything with grapefruit sounds good to me.  I’ve never been a fan of beer, but my husband likes to mix Deep Eddy’s Grapefruit Vodka with a Grapefruit Shandy Beer.  Our old neighbor shared the recipe with us and it has become a favorite.

Please be responsible when drinking alcohol.  I just learned of a young 24-year-old girl who was killed by a drunk driver.  The summer months are meant to be carefree and enjoyed, but not at the risk of hurting yourself or someone else.

Sounds like a good idea to have something on hand to offer your guests. I am not much of a drinker so I don’t know what I would offer. I do like to serve mimosas and bellinis for brunch though.

I’m not a big champagne drinker, but I love a mimosa for brunch when I’m on vacation. I’m coming to your house for brunch 🙂

Oh my goodness these drinks look amazing and soooo pretty! I’m signed up to take the Limoncello class too, we need to get together before class and make the Sangria. The cucumber margarita looks yummy too.

    Dawn,
Thank you for sharing, we have out-of-town company coming in next week and I’m SURE the Limoncello Sangria will be consumed in great quantities. One of my favorite combinations is Grey Goose Vodka (left in the freezer to get really cold) cranberry juice and pink grapefruit juice; it is very refreshing! Hope you have a wonderful summer.

Thanks Helen! I would enjoy that combination. I will have to give it a try. I hope you have a wonderful time with your company.

I love the grapefruit drink, I make it a lot! I usually make it with more than a shot of the deep Eddy, more like half and half!😂

Similar to an Arnold Palmer 🙂
