7 delicious soup recipes


January is National Soup Month and I can’t think of a better month to enjoy a nice bowl of warm soup besides February. You can pretty much count on the months of January and February being cold in Kansas.  I’m not much of a soup eater during the summer months. Soup is one of those comfort foods I like to eat on a cold winter day.

I’ve rounded up a few of my past soup recipes as well as a few others I’ve tried from other bloggers. I tend to fall into a bad habit of making the same two or three soups,  I really need to get out of my box when it comes to trying other soup recipes. I’ve included a few here that might be a little out of your box.

eggplant parmesan soup

Eggplant Parmesan Soup– My friend Anne shared this soup recipe with me.  I’m not sure I would have ever tried it myself, but it’s delicious.  I love eggplant parmesan and it tastes very similar.

hearty potato sausage soup

Hearty Potato Sausage Soup– My friend Cindy shared this potato sausage soup with me.  It’s very different from my normal go-to potato soup.  I like the addition of sausage and mushrooms.

chicken tortilla soup

Chicken Tortilla Soup– My friend Kristin shared this chicken tortilla soup with me. Are you noticing a trend here?  As the Beatles used to sing, “I get by with a little help from my friends.”

weight watchers taco soup

Weight Watchers Taco Soup– It’s that time of year Oprah and many others are counting points. I’ve made this soup in the past and enjoyed it.

Shrimp and Sausage Cioppino– I love this cioppino recipe from Giada. It’s on my list to make again soon.

slow cooker jambalaya

Slow Cooker Jambalaya– My friend Keri made this for lunch for me and I enjoy making it now as well.  It gives me a little taste of New Orleans.

lasagna soup

Lasagna Soup– This recipe is from a Farmgirl’s Dabbles. It truly is like lasagna in a bowl.

    January…..The month of a big diet plan. I’m like most people who say that in the “New Year” I’m going to eat better and shed a few extra pounds! The Lasagna Soup looks like a wonderful way to replace a big “Bravo” dinner type craving. I think it might be great for the Chiefs Win tomorrow!

      I hear you Kristin. I follow the Chinese New Year in February because it takes me the month of January to get organized and get rid of all the junk food in my house. Having a college student at home for most of January makes it hard for me to eat healthy. Any month is hard for me to eat healthy for that matter. Bravo’s lasagna is one of my favorites! Go Chiefs!
