White Chocolate Cranberry Mini Scones

- 2 cups all-purpose flour
- ¼ cup granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- 6 Tbsp I Can't Believe It's Not Butter Spread
- ½ cup dried cranberries
- ½ cup white chocolate chips
- ¾ cup buttermilk
- Sanding sugar for sprinkling on tops (optional)
- Preheat oven to 400 degrees.
- Spray baking sheet with no-stick cooking spray.
- Combine flour, sugar, baking powder and salt in medium bowl.
- Cut in I Can't Believe It's Not Butter Spread with pastry blender or two knives until mixture is size of very coarse crumbs.
- Stir in cranberries and white chocolate chips.
- Stir in buttermilk just until dough forms.
- Drop dough by helping tablespoonfuls 2 inches apart on prepared baking sheets.
- Sprinkle tops, if desired, with sanding sugar.
- Bake 15 minutes or until golden.
- Cool 5 minutes on wire rack.
- Serve warm.
