Pesto Pea Salad

Ingredients
  • ¼ lb. baby spinach leaves
  • 1 (10 oz) pkg frozen peas, defrosted
  • ½ cup prepared pesto
  • ¼ cup freshly grated Parmesan cheese
  • 1 tsp kosher salt
  • 2 tbsp toasted pine nuts
Instructions
  1. Wash the spinach leaves and spin them dry.
  2. Place the spinach and the peas in a large bowl.
  3. Add the pesto and Parmesan, then sprinkle with the salt.
  4. Toss well, sprinkle with pine nuts, and serve.
