I made this easy recipe from Kraft’s Food and Family Magazine for cheesy chicken and sweet potato enchiladas and it was delicious. The sweet potatoes give this dish a fall touch and it’s an ingredient I’ve never had in an enchilada up until now. Get out of your comfort zone and give it a try.
To Drink: Limoncello Margaritas
I shared a recipe for homemade limoncello last week and I’ve been on a quest for drink recipes to use it in. I love margaritas and thought this limoncello margarita from Simply Sated looked like a nice thirst quencher.

My friend Anne introduced me to theSkimm. Two friends who are passionate about news created theSkimm which gives you the scoop on current events in a fun and sometimes sarcastic tone. I don’t watch the news and I don’t read the paper, but I love skimming The Skimm.
To Watch: This is Us
This Is Us is a new show this fall on NBC. I’ve only watched one episode, but I have a gut feeling I’m going to love it. The first show has a bit of a twist which I find very interesting and I’m curious to see how it plays out throughout the season. Did you see This is Us? What do you think?
